A Walk On The Beach

I was in need of some walking time today—just get out, walk and let the wind clear my brain.  Emmi and I decided to head to Port Aransas and walk on the beach.  In less than 30 minutes we rode the ferry over and were on the beach.  One of the workers on board the ferry was talking to Emmi as she was hanging her head out the window—the worker told me not to try taking the ferry during spring break—you could wait 1-2 hours to get across!! 

It was a cool and windy day but still enjoyable as I had dressed for it.  We logged in about 4 miles—next time I will start out walking into the wind—when I was coming back to the car that wind was hard to walk into when I was all ready tired.  Here are some Texas photos Jill.

Back home I did a little cooking—Rollie and Gina are going to help us eat the chili I made yesterday plus I made a cake.  I just finished reading a book—A Homemade Life by Molly Wizenberg.  She also writes a blog, Orangette but does not seem to post often.  The book was very entertaining and had a host of wonderful recipes to try.  We are having French Style Yogurt Cake With Lemon tonight—I will let you know how it turns out.  Yesterday I tried one of her vinaigrette recipes and I think it is the best salad dressing I have ever eaten—so simple but oh so good!  This recipe is taken from her book A Homemade Life.

Mustard Vinaigrette

1 Tablespoon Dijon Mustard (and she does state—use a good one which I did)

3 Tablespoons red wine vinegar

1/2 teaspoon salt

5 Tablespoons olive oil, plus more to taste. 

I just dumped everything into a mason jar and shook—worked great and I didn’t need to add any more olive oil—again use a good one. 

Emmi got a bath today—the medicine we’ve been putting in her ear for the infection is really oily—we are done with the meds so it was time for a bath.  She is such a good girl about baths.

Spent some time on the computer researching our healthcare plan—I am so excited—for the first time since I married Michael 18 years ago and stopped working in a hospital which provided me with health insurance we are about to have great, fabulous health insurance—plus dental and vision.  I won’t know how to act!!  Of course it will only last as long as this job lasts but we will take it while we can!

Sunshine most of the day and warmer but our weather is supposed to deteriorate again.

  2. HI, On the mustard what do u consider a good one? I have my favorite one, coarse ground. Thought maybe I should use smooth? Glad ur getting health insurance. Hope u neither have to use it.

  5. Judging by your photos that's a beautiful beach! It's great to have good health insurance coverage, it sure takes away a lot of worry and concern. Just the same, I hope you and Michael never have to use it!!
